Our Organic Coratina Extra Virgin Olive Oil is for the robust olive oil lover: grassy, with sweet ripe fruit notes of apple and green tea on the nose, a bold, peppery & bitter (think radicchio!) finish, and a rich, luscious texture that helps to balance its strength.
Coratina's robust profile is due to exceptionally high levels of polyphenols, 679! Coratina has, on average, more than 300% more polyphenols than many other varietals of olives. Polyphenols are powerful antioxidants that prevent cellular aging, and also give olive oil exceptional oxidation stability, helping it stay fresh longer.
The Coratina olive varietal hails from Italy, primarily in Puglia, the heel of the Italian boot. Our groves is in Capay Valley, CA, about 1.5 hours north of San Francisco, one valley east of Napa.
Best used for cold applications and finishing, when you really want to taste the bright piquancy of EVOO, such as for dipping bread, dressing salads, and drizzling over grilled or steamed veggies, avocado toast, soups, and creamy cheeses like burrata and ricotta, and, of course, hummus.
