Watermelon & Feta Salad

Sweet, salty, crunchy, juicy and tangy - this mouthwatering and unusual salad is perfect summer fair as an appetizer or side. Watermelon is high in lycopene, similar to tomatoes, so it works well with this feta/olive oil/balsamic/basil combo, just with a sweeter twist!

INGREDIENTS:

  • Watermelon, cut into bite sized chunks
  • Persian Cucumber, halved and cut into 1/2" slices
  • Feta cheese, crumbled
  • Basil EVOO
  • La Resdora 3-Year or 6-year Aged Balsamic Vinegar
  • Basil leaves, torn or chiffonade
  • Maldon Sea Salt Flakes

Arrange watermelon and cucumbers together on a plate, approximately 1 cup watermelon to 1/3 cup cucumber per person. Sprinkle feta, approx 1/3 cup per person, over the top. Drizzle everything generously with Basil EVOO and aged Balsamic Vinegar, and finish with a sprinkling of crunchy Maldon Sea Salt and torn basil leaves. Enjoy! Tinker with the ratios to get your perfect balance.

Can be served as a side or as a main salad for a light lunch on a hot day with fresh, crusty bread or toast points.

VARIATIONS: Try adding in halved strawberries, tomatoes, red onion and/or fresh mint leaves to play with the flavor combos! Add a drizzle of Persian Lime EVOO for a different twist.
