Our Napa Rosé Wine Vinegar was years in the making! Made from the 2006 harvest season, this beautifully colored bright vinegar has seen several years in french oak, which has mellowed the acidity and concentrated the flavors. Our Rosé vinegar began life as a classic Rosé de Saignée, made (some might say extravagantly) from the finest Napa Valley Cabernet Sauvignon grapes. Saignée means to bleed. When making Cabernet, in order to concentrate the flavors, a portion of the grape juice is “bled” from the tank before fermenting. The grapes are not crushed artificially, just the weight of the grapes themselves in the vat is enough pressure to break some of the skins and allow some of the juice to be "bled" off. This juice, the Saignée, is traditionally made into Rosé. A viola! What we didn’t drink in the hot tub we converted into vinegar and let rest in oak for a few years. We think it will be one of the best vinegars you have ever tasted. Makes a great Berre Blanc sauce for fish or veggies or veggies pasta, or excellent in homemade mayonnaise. 6% acidity.
