We have received a few letters regarding 2 things: the new bottle of Olio Santo, and the 2010 blend, and would like to address your concerns.

In retrospect, we should have posted the info about the new bottle on the site when we began using it, just to keep folks informed, so our apologies for that. We just assumed people would love the new bottle, as it helps protect the oil, and has a built in pour spout. As you may know, light is one of the 4 enemies of olive oil (along with heat, oxygen and time) and so to ensure the quality of our beloved Olio Santo, we started bottling it this year in dark green glass. The bottle that we have used for years, the square or "quadra" bottle, is made in Italy and is only available at a reasonable price in dark green with the "ROPP" top, the twist off cap with a built in pour spout. So that is why we switched. Hopefully everyone is ok with that!

The 2010 Blend: Every year is different with agriculture, and while we try to match our classic Olio Santo profile year to year, it is never perfect. A handful of people have written in saying they think the oil is significantly different this year. So we would love to know, from as many people as we can, do you think the oil is significantly different this year and if yes how so? Stronger, milder, more kick, less kick, etc. Yes, the oil is definitely greener this year, but that doesn’t really affect the taste; some varietals are picked greener than others, and some years we use more green oil than golden, like this year. Green can often make a stronger oil, but I don’t think the oil is stronger than usual. I think it’s just green, and in a new bottle, and that thru people off; some people wondered if we were still the same company, and I can assure you that, 16 years strong, we are still the same.
