Our 2024 Select is a single varietal, Taggiasca, which you may recall was one of our 2023 Olio Nuovos. We picked this crop a bit earlier than usual for this varietal, and were able to capture a mix of green and ripe fruit notes—a grassy bouquet combined with a creamy, sweet flavor, that finishes with a peppery piquancy and just a touch of bitterness. A very well balanced, hits-all-the-notes oil. Limited quantity.
We recommend using this oil in cold applications only, to showcase its attributes: on greens, finishing vegetables, couscous, soups, hummus, or just for dipping with fresh bread! Try it drizzled on a toasted english muffin in the morning instead of butter, the warmth from the muffin makes the flavors pop.
